demasiadas tentações

para a minha alma de inverno: o livro da Bouchon Bakery, The Art of Fermentation e uma pequena série de instruções no blog da williams sonoma, the blender.

a primeira tentação poderá mesmo tornar-se pecado nos próximos dias: make-do-oreos.

white chocolate filling
35% white chocolate, chopped 125g
manteiga sem sal 15g
natas 125g

chocolate shortbread
farinha 259g
chocolate magro em pó 87g
baking soda, 1/2 teaspoon
manteiga sem sal 227g
sal 2 teaspoons que me parecem demais
açúcar 161g

ah sim, neste imenso blend linguístico.

para o recheio: derreter o chocolate e a manteiga mexendo sempre. entretanto aquecer as natas sem ferver. juntar ao chocolate com vara. refrigerar pelo menos 4 horas, no máximo 24.

peneirar a farinha, o baking soda e o cacau juntos. bater a manteiga, softened, juntar o sal, depois o açúcar. add dry ingredients. formar um cubo de massa, envolver em película e refrigerar pelo menos uma hora, num máximo de 2 dias. estender a massa, cortar as bolachas com a forma, forno uns 10 min a 170º. no livro diz 15/17 minutos, portanto a testar. deixar arrefecer and pipe the filling onto the cookie. vida útil de 3 dias, o que não é muito.
